Description
It was at the beginning of the 19th century that Mr Honorè Gavignet, a winegrower at Domaine de la Romanée Conti, created his own domaine in Nuits-Saint-Georges in the heart of Brugundy . Honoré, a man of the earth, passed on his passion to his son Maurice Gavignet. Father and son developed the business on the family property, the current Domaine headquarters. Since that day, the love of a job well done has allowed 4 generations to succeed one another from father to son, down to Arnaud Gavignet, the founder's great-grandson.
The grapes are hand-picked, placed in pierced harvesting cases, pressed immediately and placed in vats. We allow the juice to clarify for 24 hours before transferring the must to the fermentation vats. After fermentation the wine has a long ageing period on the lees in the vats before the second fermentation in the bottle. The bottles are then stored horizontally to age on the lees until the final remuage just before bottling..
